Husam Al-Sweedy says Not Guilty Blends will offer a menu that includes smoothies and smoothie bowls, porridge bowls, juices and protein shakes.

“With the amount of change around Hindley Street, we think a smoothie place would be great addition.”

The new outlet has been under construction on the corner of Hindley and Liverpool streets since early June and is expected to open for business in September.

“We are looking at an interior space to seat about 50 people, and we are also thinking about some outdoor dining,” Al-Sweedy says.

“We want to try and create a ‘not guilty’ feel to the place by using jail bars as decoration.”

Like Levant Eatery, Not Guilty Blends is a family business operated by Al-Sweedy, his mother and two sisters, and the menu will be crafted from the family’s own recipes.

Levant Eatery is well known for its modern Moorish style and its flexible menu, and has become a popular lunch destination for university students and local workers.

Al-Sweedy says the concept for Not Guilty Blends is similar to Levant Eatery in that it will provide customers with the opportunity to build their own dishes, by choosing from a wide variety of healthy ingredients such as fresh fruits and protein powders.

“We want our customers to be in charge of what they eat and how they eat it.”
