Chefs at Home – Karena Armstrong’s family favourite chicken dish

Tasting Australia’s guest programmer Karena Armstrong from the Salopian Inn shows us how she makes her family favourite chicken dish.

INGREDIENTS:

Broth 

x5 Garlic cloves
x2 Cinnamon quills
x2 Pieces of liquorice root
x4 Star anise
x5 Spring onions
½ Bunch of coriander roots
x5 Slices of ginger
50ml Sesame oil
200ml Shaoxing wine
100ml Oyster sauce
150ml Soy sauce
1tsp Salt
1tsp Sugar
1.8kg Free range chicken

Sauce 

x4 Garlic cloves
x3 Slices of ginger tops of spring onion
½ Bunch coriander root
1 Spoon of Korean chilli bean paste
100ml Soy sauce
10ml Sesame oil
x2 Limes juiced
