Sam Egerton is the Group Bars Manager at Merivale, one of Australia’s leading hospitality behemoths.

At peak periods, he’s in charge of something like 800 bartenders.

Sam jumped on the line with Living Proof’s Nicole Haack and Marcus Motteram, to discuss how the company is reducing its carbon footprint, while keeping its offering consistent across the board.
