Former Noma head chef goes “natural” at Tasting Australia

Matt Orlando, a former Noma head chef who’s created a global reputation at his own restaurant Amass, is the latest addition to the line-up for this year’s Tasting Australia festival.

Orlando will prepare a seasonal dinner – dubbed “Natural” – with local culinary star Jock Zonfrillo in Victoria Square on Thursday, May 5.

The pair will also host a free demonstration in the square on Sunday, May 1 – the opening day of the eight-day event.

Orlando, an American, has cooked alongside some of the most renowned chefs in the world. He was head chef for three years at Rene Redzepi’s Noma restaurant in Copenhagen, regularly ranked as the best restaurant in the world. He has also spent time in the kitchens at Heston Blumenthal’s Fat Duck and Raymond Blanc’s Le Manoir aux Quat’ Saisons in the UK, and Eric Ripert’s Le Bernardin, and Thomas Keller’s Per Se in New York City.

He is the owner and chef of Amass restaurant in Copenhagen,  which is regularly ranked as one of Denmark’s best.

Tourism Minister Leon Bignell said the visit was a unique opportunity for South Australians to experience Orlando’s work.

“Matt is a massive drawcard for the festival and Natural will be a firm favourite with foodies,” he said. “I am looking forward to learning his tricks of the trade in the free public demonstration.”

Orlando said he was excited about his Adelaide trip.

“The ingredients and wine from this part of the world are truly inspiring,” he said.

Other confirmed guests for this year’s Tasting Australia – the first of the new annual schedule – include David Pynt, from highly-regarded Singapore restaurant Burnt Ends, Anthony Myint and Chris Kiyuna from Mission Street Food in San Francisco, food writers Mark Kurlansky and Liz Carlisle, and excellent Melbourne chef Andrew McConnell.

Tasting Australia will be held from May 1-8.

Bookings for the Orlando-Zonfrillo dinner are open.
