Fresh at the markets: Dill

A member of the celery family, dill is a thin-stemmed herb with delicate green leaves which taste like a combination of fennel, anise and celery.

It is often used as an ingredient for pickling vegetables, but dill is quite versatile and can also be used in salads and sauces, or in fish, potato, soup or rice dishes.

Fresh dill tends to wilt quite quickly, so it is best stored in the fridge; it can also be dried for longer-term storage.

As well as the leaves, the stem and seeds can be used in cooking various dishes. Dill contains a range of folates and vitamins, calcium and iron, and has a range of health benefits, including aiding digestion.

You can find fresh dill at ALNDA Farms stall at the Adelaide Showground Farmers’ Market, and at the Salad Greens and Kitchen Herbs stall at the Adelaide Showground Farmers’ Market, Prospect Farmers’ Market and Willunga Farmers’ Market.

Dill is easy to grow at home and seedlings are currently available from the plant stalls the Showground, Prospect and Willunga Farmers’ Markets.

Adelaide Showground Farmers’ Market runs on Sundays, 9am-1pm at the Adelaide Showground, Leader Street, Wayville. Prospect Farmers’ Market is located next to Prospect Town Hall on the corner of Vine Street Plaza and Prospect Road and runs Thursdays from 3pm-7pm. Willunga Farmers’ Market is held on Saturdays from 8am-12.30pm.

Lemony Carrot Salad with Dill

Ingredients

2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 small clove garlic, minced
¼ teaspoon salt, or to taste
Freshly ground pepper, to taste
2 cups grated carrots (4 medium-large)
3 tablespoons chopped fresh dill
2 tablespoons chopped spring onions

Method

Whisk lemon juice, oil, garlic, salt and pepper in a medium bowl.

Add carrots, dill and onions; toss to coat.

Chill until serving time.

Serves 8

Dill Dipping Sauce

Ingredients

½ cup sour cream
¼ cup best quality mayonnaise
2 tablespoon chopped dill
1 tsp lemon juice

Method

Combine all ingredients and serve with crudites or crackers.
